    General Manager, Fred Sirieix joined Chef Patron Chris Galvin for the opening of Galvin at Windows in May 2006 and his unfailing charm and attention to detail has become renowned with guests ever since.

    Trained in France and London, Fred has worked in some of London’s finest establishments. He began his career in 1992 as Chef de Rang at three Michelin starred restaurant, La Tante Claire.  After a short stint working in Private Dining at the Roux brothers restaurant, Kleinwort Benson, he temporarily left London for military service where he assumed the position of Private Butler for the General Major Courtet at the French Air Headquarters in Paris. In 1995 Fred returned to London where he spent two years at acclaimed restaurant Le Gavroche, first as Chef de Rang and then as Room Service Manager. Between 1997 and 2001 Fred gained experience at  Bluebird, Glasshouse. Sartoria and Brasserie Roux at The Sofitel, St James.

    In 2003 he assumed his first position as General Manager at exclusive members restaurant and bar, Noble Rot. In 2006, after three years with Jessen & Co, Fred launched acclaimed London restaurant Galvin at Windows alongside Chef Patron Chris Galvin and Head Chef Andre Garrett. Under Fred’s watchful eye the restaurant and bar has become a leader in the London dining scene. In January 2007 Fred and his team were honoured with the Tatler restaurant award for best front of house.
